In a bowl, mix together flour and wheat semolina. Create a well in the center of the flour and add water. Mix flour and water gradually and knead to a smooth dough.
Knead the dough by hand for 10 minutes. Then pack it airtight (e.g. in a plastic wrap) and let it rest for another 10 minutes before continuing.
With this dough all kinds of pasta shapes can be produced. Therefore roll out a part of the dough on a floured surface or with a pasta machine and shape as desired. Keep the rest of the dough in the airtight wrap.
Cook the fresh pasta in salted water for 3 – 5 minutes.
