Soak the kidney beans in 1 liter of water for 12 hours. After that wash them and cook in enough water for 2 hours until tender. Remove from the water.
Meanwhile, wash the jackfruit with water and let dry.
Dice bell peppers. Cut tomatoes and spring onions. Finely dice habaneo and garlic. Heat vegetable broth and keep warm.
Heat olive oil in a big pot. Saute habanero and garlic for 1 minute. Add bell pepper and spring onion and cook for 5 minutes until tender. Add jackfruit as well as agave sirup, paprika, cumin, salt and pepper. Stir well.
Deglaze with 250ml of vegetable broth and then reduce the liquids completely.
Add kidney beans, tomatoes and the rest of the vegetable broth. Cook for 30 minutes until the chili has reached a thick consistancy. Whisk in thyme and oregano.
