Vegane Gnocchi


Italian dumplings

Peel potatoes and cut in quarters. Cover with water in a big pot and start cooking. When it starts boiling, let cook for 20 minutes. Then drain and cool off completely.

Mash the potatoes evenly.

In a bowl, mix potatoes, salt, flour and wheat semolina and kneat to a dough.

Cut the dough into 2 even pieces. Form each into a 2cm thick roll. Cut into pieces of 1 – 2cm. Then lightly mark each piece with a fork. Let the dough rest for 10 minutes.

Bring salted water to a boil. Cook the gnocchi until they start floating on the surface. Then take out of the water.

Saute in a pan with olive oil over medium heat for 5 minutes. Serve with the desired sauce.
